Temperature Monitoring during the Transportation of Frozen Durian


Durian has a high nutritional value. The flesh of durian is rich in nutrients and contains a variety of vitamins. It has a unique taste and is renowned as the "King of Fruits". Meanwhile, durian is extremely susceptible to the influence of temperature during transportation.


For import and export trade of the durian, there are two different types: fresh durian and frozen durian.

There are two kinds of freezing methods

1.Freezing of Durian Flesh

A common method is to freeze the durian flesh in a low-temperature environment below -30°C for 30 minutes. This ultra-low-temperature quick-freezing can make the moisture in the durian flesh crystallize rapidly and form tiny ice crystals. Due to the fast formation speed of ice crystals, it can minimize the damage to the cell structure of the flesh. In this way, during the subsequent storage and transportation processes, when the flesh is thawed, the loss of nutritional components and juice inside the cells will be relatively small, and the taste and flavor of the flesh can be well preserved.


2.Freezing of Whole Durian

For whole durian with shells, it will be frozen in a temperature range between -80°C and -110°C for no less than 1 hour. Such lower temperatures and a longer period of time can ensure that the whole durian is fully frozen from the outside to the inside. Under such low temperatures, the microbial activities inside the durian almost stop, and the physiological changes of the fruit are also inhibited, thus extending the shelf life of the durian. Meanwhile, freezing the whole durian can better maintain the integrity of the durian, allowing consumers to have an eating experience closer to that of fresh durian after thawing.


These freezing methods can effectively preserve the quality of durian, enabling it to better maintain its nutritional value and taste during the subsequent transportation and storage processes.


The temperature fluctuations during the transportation of frozen durian can have various impacts on its quality as follows:

Temperature Rise Fluctuations: When the temperature of frozen durian rises and fluctuates during transportation, the ice crystals in the durian will melt. When the ice crystals re-form, they will damage the cell structure of the flesh, resulting in the loss of elasticity of the durian flesh after thawing, becoming soft and mushy, and having a poor taste. The nutritional components will also be lost due to the outflow of cell sap.

Repeated Freezing and Thawing: If the temperature frequently fluctuates across the freezing temperature critical point during transportation, it will cause the durian to experience repeated freezing and thawing. This will not only exacerbate the damage to the cell structure but also accelerate the oxidation of fats in the durian, producing rancid odors and other abnormal smells, severely affecting its flavor and quality.

Transportation of Frozen Durian:

During the transportation of frozen durian, a full cold chain is required to ensure that the temperature is always maintained within the appropriate range. The transportation temperature of frozen durian is generally required to be -18°C or below.
